Yesterday, I made cupcakes and frosting in a lovely pale green shade for St. Patrick's Day. What I did was to make the pistachio pudding mix -in- cake mix combination for the cake and pistachio pudding mix plus dream whip for the frosting.

This was a bit risky because standard-issue pistachio cake recipes say nothing about making cupcakes with it. I also should have added as much oil as the recipe called for, rather than less (I only used 1 cup of vegetable oil), and used yellow cake mix rather than white; I would have gotten less "crumbly" cupcakes. (With white cake mix, pistachio pudding powder make a very subtle pale green cake, the frosting is more brilliant in color.) While I liked 'em, and consider the experiment a success, not everyone in my family was so enthusiastic...
