View Full Version : What makes cupcakes crumbly?

I had a Valrhona chocolate cupcake last night, and (though expensive chocolate is usually enough to make any cupcake a good one!) it was very crumbly and practically disintegrated while I ate it. It didn't seem to be particularly dry, so I couldn't figure out what made it so crumbly. If I had been the cupcake maker, what should I have looked at changing in the recipe?

I know from muffin baking that if I use just a little bit too much flour or too little liquid, they can crumble easy even if they're still moist.

Honestly, I am still learning myself, but wouldn't a more moist cupcake have helped? I know that adding more liquid to a cupcake recipe can help. Am I correct? I am actually wondering the same thing.
