Polkadot Cupcakes review: Red Velvet mini cupcake

With a high crown of cream cheese frosting, festively adorned by pastel-colored pailettes, the Red Velvet mini cupcakes are an example of a seemingly humble food item rarified and raified by attention to detail. The crumb is moist and even-textured throughout, though stiff enough to hold together and not produce...crumbs. Unlike many other Red Velvet cakes and cupcakes made by home and professional bakers, Polkadot Cupcakes mini Red Velvet cupcakes are a more "natural" and by implication, more "appetizing" carmine red, rather than the blue-red I've often seen in this baked-goods genre.
