coloring shredded coconut

Does anyone have any tips for coloring shredded coconut? I always see pictures of cupcakes and other baked goods covered in beautiful pastel-tinted shredded coconut, but any time I try to make my own it comes out all blotchy. :sad:

I've posted about this on my site... I use a plastic Ziplock and it usually comes out fairly good :)
