Mmm this is possibly one of my favourites to make and to eat.
:tongue2: However to date I have only used it on bigger cakes, it's time to make my mothers recipe for decorating cupcakes (just be careful not to eat too much of it whilst you are making it - otherwise you could be left with not enough!!! ... trust me on that one!)
Ingredients
- 225g (8oz) butter, softened
- 15ml spoon (1tbsp) cream or milk
- 350g/12oz icing sugar

Method
Place the butter and cream in a bowl and beat together. gradually add and sift in the icing sugar
Variations
Orange/Lemon Buttercream
Substitute fresh orange or lemon juice for the cream and add a little orange or yellow food colouring
Chocolate Buttercream
Replace 55g/2oz of the sugar with Cocoa Powder
Coffee Buttercream
Replace the cream with 1 tablespoon of strong espresso coffee and 1/4 teaspoon of coffee extract
Mocha Buttercream
Replace 55g/2oz of the sugar with Cocoa Powder and replace the cream with 1/4 teaspoon of coffee extract
Nut Buttercream
Beat 175g/6oz butter with the sugar, then add 1/4 teaspoon of vanilla extract, 55g/2oz smooth peanut or almond butter, and 100g/3.5oz chopped pecan nuts or blanched almonds to the finished icing and beat well
Decorate
Star shaped pipette - you can never go wrong!
