Hey!

I made cupcakes a few times according to the basic recipe. I tried to color the batter purple, now it did work but only the inside. The top of the cupcake is this strange dark greenish color.

Anyone know why this is? I tried the same with black foodcoloring. Same outside and inside greyish color.

I searched the internet for this and found that I need to use only egg whites so I did. The purple inside is actually purple. But the outside looks so ugly that you don't wanna eat it.

Any help is appreciated.

It sounds like the color is separating in the batter; what type of food coloring is it, gel or liquid? Gel usually is more cohesive. Is it an old set of colors? Does this happen with every recipe?

It is gel food coloring and I bought it a few days ago. Never tried to use food coloring in other things.
